Healthy lamb & feta meatballs with hidden veggies

Ideal as a healthy lunch or dinner when taking part in the 28 Day Weight Loss Challenge, these Healthy Lamb and Feta Meatballs use lean minced lamb, low fat feta cheese and loads of veggies for a nutritious take on a family favourite.

One of the best ways to turn your favourite comfort food into a healthy, weight loss friendly meal, is to try and make it from scratch at home, using lean, fresh ingredients.

When you remove many of the packets from your pantry, you also remove all the added sugar, salt and calories that they often bring with them.

Healthy Lamb & Feta Meatballs With Hidden Veggies

Ingredients (makes 6 serves)

Meatball Sauce
  • 700g tomato passata
  • 1 brown onion, diced (100 grams)
  • 2 cloves garlic, crushed (6 grams)
  • 2 tbsp salt reduced tomato paste (32 grams)
  • 1 tsp cinnamon (1 gram)
  • 1 tbsp olive oil (15 mls)
Meatballs
  • 500g lean minced lamb
  • 2 cloves garlic, crushed (6 grams)
  • 1 spring onion, diced (15 grams)
  • 1/4 cup wholemeal breadcrumbs (15 grams)
  • 2 eggs, beaten (100 grams)
  • 1 tsp ground cumin (1 gram)
  • 100g low fat feta cheese
  • 1 tbsp olive oil (15 mls)
  • 1/2 medium carrot, grated (35 grams)
  • 1/2 courgette, grated (55 grams)
  • 1 tbsp lemon juice (15 mls)
  • 2 tbsp flat leaf parsley coarsely chopped (10 grams)

Method

  1. Heat olive oil in a saucepan over medium heat.
  2. When warm, add garlic and onion to the pan and saute gently.
  3. When onion has started to turn transparent, add the passata, tomato paste and cinnamon.
  4. Stir well then bring to the boil.
  5. Once boiling, reduce heat to low and allow to simmer for 15-20 minutes while you make the meatballs.
  6. Place all meatballs ingredients into a large bowl.
  7. Using clean hands, mix everything (except olive oil) till well combined.
  8. Roll into balls (makes about 20 medium sized and 40 smaller balls)
  9. Heat olive oil in a frypan over medium heat.
  10. Add meatballs and gently fry until golden.
  11. Serve meatballs with tomato sauce and parsley and your choice of side dish.
