Single serve blueberry cheesecakes (for those of us who need portion control!)

Sabrina has shared this cheesecake recipe with us today and we think it looks FANTASTIC!

Sabrina says โ€œIโ€™ve been following theย 28 Day Weight Loss Challengeย for two months now, and this morning Iโ€™ve made these delicious single serve chilled blueberry cheesecakes.โ€

Single serve blueberry cheesecakes (for those of us who need portion control!)

We LOVE the idea of making single serve desserts, that way thereโ€™s no concern about going over your calorie goals!ย Portion controlย is a great way to stay on track with your healthy eating plan.

Single serve blueberry cheesecakes

Ingredients (makes 4 serves)

Base

  • 1/4ย cupย pitted dates (42.5 grams)
  • 1ย tbspย coconut oil (15 mls)
  • 1/4ย cupย almondsย lightly blitzed (30 grams)
  • 1/4ย cupย rolled oatsย lightly blitzed (25 grams)
  • 2ย tbspย shredded coconut (20 grams)
Blueberry swirl
  • 1/2ย cupย frozen blueberries (120 grams)
  • 1ย tbspย maple syrup (15 mls)
  • 1/2ย tspย lemon juice (5 mls)

ย Filling

  • 125ย gramsย light cream cheeseย at room temperature
  • 70ย mlย coconut cream
  • 2ย tspย honey (10 mls)
  • 1/2ย lemonย juiced (25 mls)
  • 1/2ย tspย vanilla extract (2.5 mls)

Method:

Base
  1. Soak dates in boiling water for 10 minutes.
  2. Drain dates and add coconut oil, puree using stick mixer
  3. Lightly blitz your almonds and oats in a food processor or blender. Pour them into a bowl and add coconut.
  4. Add date puree to your oat mix and mix with your hands to combine. Set aside.
Blueberry swirl
  1. In a small saucepan over a low heat add your blueberries, maple syrup and lemon, let it reduce for about 10 minutes while you prepare the filling.
Filling
  1. In a bowl mix together cream cheese, coconut cream, honey, lemon juice and vanilla until combined.
  2. Divide your base into 4 glasses, ramekins or small containers and lightly press down.
  3. Top with cream cheese filling mixture, and then swirl a small amount of blueberry mix on top.
  4. Place in the fridge to chill for 1 hour or more.

Makes for individual cheesecakes with 308 calories per serve
