Microwave cakes are a great way to satisfy your sweet tooth quickly. Sadly, the majority of the “mug cake” recipes that you find on the internet are packed full of refined sugar and unwanted calories that will put a dampener on your efforts while following the 28 Day Weight Loss Challenge.

Thankfully, there are those rare, wondrous recipes that not only taste great but won’t ruin your weight loss goals.

Here are 6 microwave mug cake recipes that are ready in minutes and if you’re anything like us, devoured in seconds! All but one are egg free too, which is great when you’re running low on ingredients.

6 Healthy Microwave Mug Cakes

1.Healthy Apple Pie Mug Cake

The fruity sweetness of the apple and cinnamon in this DELICIOUS creation from the 28 Day Weight Loss Challenge makes it an absolute winner.

Ingredients

  • 1/2 green apple, peeled and diced (50 grams)
  • 1/4 tsp cinnamon (0.3 grams)
  • 1 tsp vanilla extract (5 mls)
  • 2 tsp honey (10 mls)
  • 1/4 cup wholemeal self-raising flour (30 grams)
  • 1/4 cup almond milk, unsweetened (62.5 mls)

Method

  1. Place the apple in a microwave-safe mug and microwave until soft, for about a minute.
  2. Add the rest of the ingredients and combine with the apple. Add a little more milk for a smooth batter if required.
  3. Return to the microwave for 2 minutes or until cooked through.
  4. Tip onto a plate and top with yogurt and some cinnamon to serve if you like.

Recipe makes 1 mug cake at 230 calories

3. Healthy Chocolate Mug Cake With Warm Caramel Sauce

Self saucing caramel mug cake. Heaven in a mug thanks to the 28 Day Weight Loss Challenge!

Ingredients

  • 1/3 cup reduced-fat coconut milk (83.3 mls)
  • 1 tsp coconut sugar (4 grams)
  • 1/4 tsp vanilla extract (1.3 mls)
  • 1/3 cup wholemeal self-raising flour (40 grams)
  • 1/4 cup reduced-fat milk of choice (62.5 mls)
  • 1 tsp honey (5 mls)
  • 1 tbsp cacao/cocoa powder (8 grams)

Method

  1. Make the caramel sauce first by whisking together the coconut milk, coconut sugar and vanilla extract in a mug with a fork until well combined.
  2. Microwave in 30 second increments, whisking between each, until thick and dark (this will take about 2-3 minutes). Set aside.
  3. Combine flour, milk, honey and cacao/cocoa in another microwave-safe mug and stir to combine.
  4. Cook in the microwave for 1-2 minutes (depending on your microwave) until cooked through.
  5. Run a knife around the edges of the cake and turn out into a serving bowl. Pour over caramel sauce to serve.

Recipe makes 1 mug cake at 404 calories

4. Banana Mug Muffin Cake

This banana mug cake is full of fibre to keep you fuller for longer which makes it not only a great dessert – but a great breakfast option too!

Ingredients

  • 1/4 cup rolled oats (25 grams)
  • 1 tsp honey (5 mls)
  • 1/4 small banana, mashed (22.5 grams)
  • 1 tbsp reduced-fat milk of choice (15 mls)
  • 1 egg white (25 grams)
  • 1/8 tsp cinnamon (0.1 grams)

Method

  1. Add all ingredients in a large mug and mix well to combine.
  2. Place mug in the microwave and cook on high for 1 minute. Check to see if the batter looks cooked through, if not, continue cooking at 30 second intervals until firm.
  3. Serve immediately.

Recipe makes 1 mug cake at 160 calories

5. Berry Mug Cake

A delicious sweet snack full of antioxidants and fibre to help shift that belly bulge. Use gluten free flour if required.

Ingredients

  • 1/4 cup plain wholemeal flour (30 grams)
  • 1/4 tsp baking powder (0.625 grams)
  • 1 tsp Natvia (4 grams)
  • 1/4 cup reduced-fat milk of choice (60 mls)
  • 2 tsp coconut oil (10 mls)
  • 1/4 tsp vanilla extract (1.25 mls)
  • 2 tbsp fresh or frozen raspberries (40 grams)

Method

  1. Combine all ingredients excluding the raspberries in a microwave-safe mug.
  2. Mix with a small whisk (or a fork) until batter is smooth.
  3. Gently stir raspberries into the batter.
  4. Cook in the microwave on high for one minute. Remove from the microwave and check if the cake has cooked through, if not, cook for a further 15 seconds or until cooked.
  5. Allow cake to cool for a few seconds before serving. As an optional decoration, add a few extra berries and some shredded coconut.

Recipe makes 1 mug cake at 231 calories.

6. Sticky Date Microwave Cake

Last but not least – we know you are going to love this Sticky Date cake from the 28 Day Weight Loss Challenge.

Ingredients

  • 3 medjool dates, fresh (45 grams)
  • 1/3 cup water (83.3 mls)
  • 2 tablespoons ground almonds (24 grams)
  • 1 & 1/2 tablespoons cacao/cocoa powder (12 grams)
  • 2 tsp coconut oil (10 mls)
  • 1/4 cup reduced-fat milk of choice (62.5 mls)
  • 1/2 tsp baking powder (1.3 grams)
  • salt
  • 2 teaspoons dark chocolate bits (5 grams)

Method

  1. Chop the dates, removing pits and place in a microwave-safe dish or ramekin. Cover with the water and place in microwave for 1 – 1 & 1⁄2 minutes until water has evaporated and dates are soft.
  2. Mix in remaining ingredients (excluding the dark chocolate bits) and while mixing break up the dates into the mix.
  3. Return to the microwave for another 1-1 & 1⁄2 minutes until cooked through. Top with dark chocolate bits while still hot to allow them to melt slightly before serving.

Recipe makes 1 mug cake at 352 calories
