Leftover Chicken & Ham Caesar Wrap
How about a quick wrap for lunch made with leftover ham and chicken? Just add some tasty Parmesan, cos lettuce and a free range egg.

- 2 free-range eggs
- Olive oil spray
- 1 cup leftover sliced chicken breast
- 2 slices lean smoked ham
- 1 cup cos lettuce
- 2 tbsp Greek reduced fat natural yoghurt
- 2 tbsp grated Parmesan
- 2 slices wholemeal Mountain Bread Wraps
- 3 tsp lemon juice
Ingredients

- Hard boil the eggs using your preferred cooking method.
- While the eggs are cooking, heat a non stick fry pan over medium-high heat and spray with the oil. Add the chicken and ham to warm through. Set aside.
- When the egg is cooked and cooled, peel it and slice.
- vCombine the yoghurt and lemon juice to create the dressing.
- Top the wrap with the chicken, ham, egg and shredded lettuce and then sprinkle everything with the Parmesan cheese and drizzle over the dressing.
- Roll the bread to form a wrap and enjoy!
Recipe makes 2 serves at 261 calories each.
