If you love mint slice biscuits, here is a healthy version that you can enjoy anytime.
The sweetness of the coconut means that you only need a small amount of maple syrup to complete the filling of these chocolate treats.
Perfect with a cup of herbal tea, itโs best to hide these from the kids as they will devour them.

- 1 cup coconut desiccated or shredded
- 2 tbsp almond meal
- 3 tsp coconut oil melted
- 1.5 tsp mint essence
- 2 tsp pure maple syrup
- 2 tsp water
- 120 grams dark choclate 70% cacao or above
Ingredients

- Blitz coconut, almond meal, coconut oil, mint essence, maple syrup and water until well combined and creamy in texture.
- This will take a few minutes of blitzing then stopping to scrape down the sides and blitzing again.
- Divide into 12 pieces. Roll into balls, flatten slightly and place on a tray lined with baking paper and set aside.
- Melt chocolate using your preferred method.
- Place 3/4 teaspoon of melted chocolate into a chocolate mould or patty case.
- Tilt moulds/cases so chocolate coats the base and up the sides. You may need to repeat this step a few times so that the chocolate, when set, creates a wall. โจ
- Pop in fridge or freezer to set.
- Once set, place a mint ball into each case then press down to fill the space.
- Top with remaining chocolate and pop back in the fridge or freezer to set.
