Simple Meatball Sub
This meatball sub is a quick and healthy take on a lunchtime favourite.

Ingredients
- 60 grams lean beef mince
- salt
- pepper
- 1/4 spring onion finely diced (3.75 grams)
- 1/2 tsp dried Italian herbs (0.5 grams)
- 1 tsp extra virgin olive oil (5 mls)
- 1 wholegrain long roll (80 grams)
- 1 tbs tomato passata (15 mls)
- 2 tbs cheddar cheese reduced-fat (15 grams)

Instructions
- Combine the mince with spring onion, dried herbs and season with salt and pepper. Roll into three meatballs per serve.
- Heat olive oil in a frying pan over medium-high heat. Add the meatballs and cook for 4-5 minutes on each side until cooked through.
- Preheat oven griller to high.
- Slice the bread roll down the middle but donโt cut all the way through.
- Add the meatballs to the roll, top with tomato passata and sprinkle over the cheese.
- Place under the griller for 3-5 minutes or until the cheese has melted.
- Serve immediately.
