Choc Chip Peanut Butter Fudge Bites

Ingredients (makes 12)

Base
  • 4ย tbspย coconut oilย melted (60 mls)
  • 4ย tbspย natural peanut butter (48 grams)
  • 1ย tbspย mini dark choc chips (10 grams)
Top
  • 50ย gramsย dark cooking chocolateย 70% cocoa
  • 1/2ย tbspย coconut oil (7.5 mls)

Method:

Base
  1. Whisk coconut oil and peanut butter together until smooth.
  2. Spoon into 12 silicon moulds, sprinkling chocolate chips into each one.
  3. Place in freezer for 15 minutes until set.
Top
  1. Melt cooking chocolate and coconut oil together, mixing well.
  2. Spoon chocolate on top of peanut butter fudge.
  3. Return to freezer for 10 minutes until set.
  4. Remove from tray.
  5. Store in an airtight container in the fridge for up to 2 weeks.
