Raw bounty slice just 190 calories
Ingredients (makes 12 pieces)
- 1ย cupย roasted cashews (120 grams)
- 180 mls boiling water
- 2ย tbspย cacao/cocoa powder (16 grams)
- 1/2ย cupย coconut flour (62.5 grams)
- 1ย cupย desiccated coconut (100 grams)
- 1/2ย cupย coconut flour (62.5 grams)
- 1/2ย cupย water (125 mls)
- 1ย tbspย pure maple syrup (15 mls)
- 2ย tbspย cacao/cocoa powder (16 grams)
- 2ย tbspย pure maple syrup (30 mls)
- 125 mlsย coconut oil,ย melted
Method
Base

Soak cashews in boiling water for 15 minutes.

Place soaked cashews and water, along with the remaining ingredients into food processor.

Blitz on high for one minute, scraping the sides of the bowl half way through.

Press base mixture down evenly into a lined 20 x 30cm slice tin.

Place in refrigerator.
Centre
-
Place all ingredients in food processor.

Blitz on high for 30 seconds until combined.

Press centre mixture firmly down on top of the base.

Place in freezer for 30 minutes.
Top

Whisk all ingredients together in a bowl.

Pour on top of the centre.

Return to refrigerator for 1-2 hours before slicing into 12 pieces, using a hot clean knife.

Store in an airtight container in the fridge for up to 7 days.
