5 minute microwave ham and cheese quiche

Need a quick and easy lunch or a tasty dinner for one? This super simple microwave quiche cooks in just 2.5 minutes! Customise to your heartโ€™s content, using leftover roast meat, some roasted sweet potato, leftover steamed greens, or add some cherry tomatoes.

Microwave ham and cheese quiche

Ingredients (makes 1 serve)

  • 2ย large eggs (100 grams)
  • 1ย tbspย self raising flour (10 grams)
  • 40ย gramsย hamย chopped
  • 40ย gramsย broccoliย chopped and lightly steamed
  • 1/4ย small onion or 1 shallotย diced (50 grams)
  • 2ย tbspย tasty cheese,ย grated (24 grams)
  • 2ย tbspย Parmesan cheese,ย grated (24 grams)
  • 2ย tbspย flat leaf parsley (5 grams)
  • Salt and pepper to taste
  • Chilli flakes, to serveย optional

Method

  1. In a mixing bowl, whisk the eggs, add the flour and combine well with a wooden spoon.
  2. Add all remaining ingredients and mix until well combined.
  3. Pour into a single ramekin and microwave on high for approximately 2.5 minutes or until cooked through. Cooking times may vary between microwaves.
  4. Sprinkle with chilli flakes, if using.
