Three layered (no bake!) apple crumble slice just 210 calories

If you love apple crumble, we have some great news.

One of our Healthy Mummy community members has made a healthy version of the traditional dessert, which is ideal for when you are following the 28 Day Weight Loss Challenge.

Three layers of pure perfection which will impress your friends and family, and satisfy any sweet craving.

PLUS it’s all made in the fridge/freezer (no oven!) so you could even get the kids to help out.

Three layered apple crumble slice

Ingredients (makes 10 slices)

Base
  • 12 plain digestive biscuits (177 grams)
  • 2 tbsp coconut oil, melted (30 mls)
  • 1 tbsp honey (15 mls)
  • water (only a small amount needed if the mix is crumbly)
Apple mixture
  • 3 green apples, peeled, cored and finely diced (300 grams)
  • 2 tbsp coconut oil, melted (30 mls)
  • 1 tbsp corn flour mixed with a little water to make a runny paste (7.5 grams)
Crumble topping
  • 1/2 cup rolled oats (50 grams)
  • 2 tbsp ground almonds (30 grams)
  • 2 tbsp desiccated coconut (16 grams)
  • 1 tbsp pure maple syrup (15 mls)
  • 1 tbsp coconut oil melted (15 mls)

Method

Base
  1. Mix all ingredients for the base in a food processor, only add water if the base mix is too crumbly to bring the mix together.
  2. Once well combined, in a loaf tin lined with baking paper, pour in the base ingredients and flatten down firmly with your hand.
  3. Put in the freezer to set, and move on to the next step
Apple layer
  1. In a small pot, put all the ingredients except the cornflour mix, on a low/medium heat and soften the apples for around 20 min.
  2. Once the apples have softened add the cornflour mix and stir to thicken.
  3. Once it has thickened, place the apple mix over the base.
  4. Let it cool slightly before setting in the fridge.
Topping
  1. Add the topping ingredients to a food processor and blend together. You don’t want to completely grind up the topping, you still want it a little textured.
  2. Once combined, pour over the apple layer and press down to pack it on.
  3. Once the topping is on, set in the freezer for 1-2 hours.
  4. Once set cut into 10 pieces, one piece is one serve.

Makes 10 slices at 210 calories per slice
