Kid-friendly delicious “Bounty” choc chip cupcakes
Chocolate, coconut and cake – what more could you ask for?
This delicious Bounty flavoured cupcake recipe will leave you looking for crumbs. It is the perfect snack to add to your 28 Day Weight Loss Challenge meal plan and be sure to make a double batch (or you might have to hide them from the kids!).
Bounty Choc Chip Cupcakes
Ingredients (makes 12 cupcakes)
- 1 cup wholemeal flour (120 grams)
- 1 cup desiccated coconut (100 grams)
- 2 tsp baking powder (2 grams)
- 2 tbsp cocoa/cacao powder (16 grams)
- 2 tbsp rice malt syrup or honey (30 mls)
- 1 egg (50 grams)
- 1 ripe banana (90 grams)
- 4 tbsp Greek yogurt (80 grams)
- 1 tsp vanilla extract (5 mls)
- 1 tbsp Natvia or sugar/sweetener of your choice (16 grams)
- 1/2 cup light milk (125 mls)
- 1/4 cup dark choc chips for topping (30 grams)
Method

Preheat oven to 200C/gas mark 4

Prepare a 12 hole cupcake tin with cupcake cases

Combine dry ingredients in a bowl

In another bowl, mash the banana and add wet ingredients, combining well

Pour and fold wet ingredients into the dry ingredients (add more milk if it is too thick, it depends on the sugar you use)

Pour into cupcake cases and sprinkle the dark chocolate chips over the top

Bake in oven for 15-20 minutes or until a skewer comes out clean when inserted into the centre
Makes 12 cupcakes at 112 calories per serve
