Tangy lemon and coconut slice

This no added sugar and dairy free lemon and coconut slice will be loved by the whole family and you can still have it as a treat on the 28 Day Weight Loss Challenge too.

Tangy lemon and coconut slice

Ingredients (makes 15 serves)

  • 2 cups desiccated coconut (240 grams)
  • 1 cup ground almonds (150 grams)
  • 100 mls coconut oil
  • 2 tbsp honey (30 mls)
  • 1/3 cup lemon juice (80 mls)
  • 4 tsp lemon zest (16 grams)
  • 300 grams coconut yogurt

Method

  1. Use a rectangular non-stick loaf pan, and line it with baking paper.
  2. Mix 1 & 3/4 cups of the desiccated coconut (200g), ground almonds, ¼ cup of the melted coconut oil, 1 tablespoon of the honey, the lemon juice and zest in a food processor until well combined, use a little water if needed to bring the mix together.
  3. Press into the prepared tin and place into the freezer until firm.
  4. Mix the yogurt, remaining desiccated coconut, remaining coconut oil and remaining honey in a food processor until well combined and pour over the base layer. Return the tin to the freezer until topping has set.
  5. Slice into 15 pieces. 1 piece is 1 serve.
  6. Leftovers can be stored in an airtight container in the freezer for up to 2 months.
  7. Remove a piece approximately 30 minutes before ready to serve to defrost slightly.
