20 minute satay chicken quesadillas

Hereโ€™s a fantastic lunch or dinner option that is fast and PACKED with flavour.

Satay sauce when homemade can be full of healthy ingredients like spices, peanut butter and coconut milk. Itโ€™s a great way to give yourself a boost of energy when youโ€™re following theย 28 Day Weightย Loss Challenge.

Satay Chicken Quesadilla

20 Minute Satay Chicken Quesadillas

Ingredients

Satay sauce
  • 2ย tbsp 100%ย natural peanut butterย (32 grams)
  • 1/2ย cupย water (125 ml)
  • 1/4ย cupย light coconut milk (62.5 mls)
  • 1/4ย red onion,ย finely diced (25 grams)
  • 1/4ย tspย cumin (0.3 grams)
  • 1/4ย tspย chilli paste (0.3 grams)
  • 1ย tspย olive oil (5 mls)
Quesadilla
  • 400ย gramsย chicken breast,ย sliced into strips
  • 1ย cupย baby leafย spinach (30 grams)
  • 1ย red pepper,ย sliced (100 grams)
  • 2ย tspย olive oil (10 mls)
  • 4ย wholemeal wraps/tortillas (240 grams)
  • 1/4ย cupย grated Parmesan cheese (36 grams)

Method

Satay sauce
  1. In a small saucepan, heat 1 tsp olive oil on medium heat, add onions and sautรฉ until soft.
  2. Add remaining satay ingredients.
  3. Simmer on low heat, stirring continuously for 1 minute.
  4. Set aside.
Quesadillas
  1. Heat the olive oil in a frying pan on high heat.
  2. Place chicken strips into pan, and cook on both sides until cooked through.
  3. Roughly chop the cooked chicken strips.
  4. Spread 1 tbsp of the satay sauce onto the base of each wrap.
  5. Place chopped chicken, red pepper, Parmesan cheese, spinach and spring onions on one half of the wraps.
  6. Fold wraps in half and toast in a sandwich press. If you donโ€™t have one, cook them one at a time in a frying pan with a heavy pan placed on top to help them crisp up.
  7. Once toasted, cut into slices and enjoy.

Makes 4 serves at 420 calories per serve.
