Three Ingredient No Bake Apricot Bites

First of all, it has just THREE INGREDIENTS.

Secondly, it requires ZERO BAKING.

And thirdly, it makes EIGHTY squares of apricot-y goodness!

Instructions
  1. Grease and line a 25cmx25cm baking tray.
  2. Blitz the 200g of coconut, 500g of apricots and 100g of dates in a food processor until well combined.
  3. Press mixture firmly into baking tray and refrigerate for approximately 1 hour.
  4. Cut into 80 small squares and coat them with the additional desiccated coconut, if using.
